There’s something so satisfying about fruit-filled salads. What we love best about them is that you can satisfy your sweet tooth while chowing down on a healthy, leafy meal. What sounds better than that? Another reason to add fruit to your salads— the colors make them look almost too good to eat. Nothing brightens up some boring greens on a plate quite like some juicy, bright, fresh berries. Summer is just around the corner, and we like to welcome it the best way we know how to—with food, of course. Try this Summer Strawberry Spinach Salad recipe to celebrate the return of warmer days.
Summer Strawberry Spinach Salad Recipe
10 ounces fresh spinach
½ small red onion (optional)
1 cup feta cheese
¾ cup walnuts
Balsamic dressing (optional)
Wash produce. Slice strawberries and red onion. Place spinach in a bowl and add strawberries, onion, and walnuts. Toss together before adding the feta cheese and dressing of your choice (we recommend balsamic, but any dressing you like will do). Toss again, then season with salt and pepper to taste.
*Tip: If you want to add some healthy protein, grill up some chicken and serve it over top of the salad. For a healthy-fat boost, slice up some avocado too for a balanced, satisfying summer meal.
