If you ask us, there’s only one right way to celebrate Cinco de Mayo: consume as many tacos as possible in the shortest amount of time.
With the holiday just days away, we wanted to share our favorite recipe for homemade chicken tacos. You can make this shredded chicken right in your slow cooker in just a few hours. It’s ridiculously simple and tastes delicious, so there’s really no reason for you not to try this one out.
Shredded Chicken Slow Cooker Tacos:

2 pounds boneless chicken breasts
1 packet taco seasoning of your choice
¾ cups diced onion
1 jar salsa
⅓ cup chopped cilantro
Put chicken breasts in bottom of slow cooker and sprinkle taco seasoning on top before adding the salsa, lime juice, and cilantro. Put lid on top of slow cooker and cook on high for 4 hours. Once cooked, remove from cooker and shred chicken with a fork in separate bowl. Use juice to moisten chicken as you shred it.
Serve with tortillas and taco toppings of your choice. We love cheese, hot sauce, and of course, guac. We also love serving these with our favorite homemade mango and pepper salsa.
