Keto Cheesy Cauliflower Mash Recipe

1 bag frozen riced cauliflower
2-3 garlic cloves
¼ cup sour cream
3 tbsp. Butter
4 tbsp. Parmesan cheese
1 tsp salt (or more to taste)
Pepper to taste
Chopped chives for garnish (optional)
Cook frozen cauliflower rice according to instructions on the bag. Once cooked, place it in a blender along with the other ingredients. Pulse the mixture until it’s blended well and is your preferred consistency. Serve with chives for garnish (optional).
